The Lezcano family has been at the heart of coffee production in Panama for five generations, crafting exceptional coffee since 1947 in Renacimiento, Santa Clara.

Their farm, Santos Café Panama, spans 55 hectares of lush plantations rooted in rich volcanic soil and shaded by native trees. Located at altitudes ranging from 1,100 to 1,400 masl, the farm is ideal for growing high-quality coffee. The majority of their production—around 80%—features a blend of Caturra and Catuaí. Meanwhile, the prized lot of La Mimada is home to specialty varieties like Pacamara, Caturra, Yellow Bourbon, and Geisha. With temperatures dipping below 13ºC and the benefit of wide natural shade, these conditions yield beans with enhanced sweetness and a bright, vibrant profile.

At La Mimada, meticulous post-harvest care ensures the highest quality. All beans are dried on African beds under the sun, with a slow drying process that takes 20 to 28 days. Their methods include a variety of processes—Washed, Honey, Natural, and extended fermentation—each designed to bring out unique flavor characteristics in the cup.
